Veggies + Chocolate = Delicous {Chocolate Zucchini Cake}

It's inevitable this time of year, the abundance of zucchini takes over the kitchen and I try and figure out what to do with it. 

Zucchini bread? of course there will be MANY loaves of bread made, but who wants bread all the time when you can have CAKE? 

We absolutely love this recipe. It's a favorite around here because it is so moist, delicious and easy. It's so good the kids don't even realize there are vegetables in it. You can peel the zucchini if you really want to be sneaky, but it's really not necessary.

Chocolate Zucchini Cake 


2 c. Sugar 
3 Eggs 
3/4 cup oil 
1tsp Vanilla 
2 cups grated Zucchini 
2 ½ c. Flour 
½ c. Cocoa powder 
2 ½ tsp baking powder 
½ tsp baking soda 
1 tsp salt 
½ c. milk 

With a mixer beat the sugar, eggs, oil and vanilla until creamy. Add in the grated zucchini and mix well. Stir in the flour, cocoa powder, baking powder, baking soda & salt and mix well. Add the milk and continue mixing until creamy. Place in a greased 9x13 pan and bake at 350° for about 20 minutes or until a toothpick comes out clean.
You could frost this cake if you want, but you don't really need to. The top is pretty moist and fudgey so we just eat it as is kinda like a snack cake and it is wonderful.

    cause we love zucchini nut bread,
    so will have to give it a try. We are always looking for good ways
    to get more veggies in our diet, and zucchini cake sure works for me!! ha
