It's Brittney's 15th birthday on Wednesday, but it's church night so she won't get to pick out dinner. She will however get to help choose dinner when we have her family birthday party on the 31st. She is really growing up way too fast and I can't believe she is driving (learning to drive). aahh! Hopefully this week will be a little less crazy than last week. Here is my plan:
Monday- Sausage egg casserole and fruit & yogurt smoothies
Tuesday- Creamy chicken casserole, salad & mandarin oranges and bananas
Wednesday- Dinner @ Church, I'll bring a Strawberry pop cake (Britt's birthday request) & One-pan fudge cake
Thursday- Italian Stir-fry (first time trying, but it looks great), salad & bread
Friday- Taco soup (recipe below)
Saturday- Teriyaki Chicken, brown rice and sugar snap peas
Taco Soup
1 lb browned ground beef
1 small can chopped green chilies
1 can corn (undrained)
1 can black beans (undrained)
1 can diced tomatoes (undrained)
1-2 cans water (depending on the thickness you like)
1 pkg taco seasoning (I use homemade gourmet seasoning)
Combine all and bring to a simmer for about 15minutes. Serve with shredded cheese, sour cream and tortilla chips. Serves 4-5 people
